Potassium metabisulfite is a granular powder used to prevent oxidation and growth of wild yeast, mold, and bacteria in must or wine. Potassium metabisulfite is also used in stronger doses with water to sanitize equipment.

How to use with must & juice: Potassium metabisulfite can be added to fresh must or juice 24 hours prior to adding the wine yeast. Add one 1/16 teaspoon of potassium metabisulfite per each gallon of juice, or for each 8 pounds of crushed fruit, mix thoroughly. Adding wine yeast 24 hours later is vital to having a complete fermentation. For over-ripe and potentially moldy fruits, double the dosage.

How to use with wine: Ensure fermentation is complete before adding potassium metabisulfite to the wine. This can be done using a hydrometer and checking to see if there are any small bubbles rising in the wine. Add 1/16 teaspoon per each gallon of wine to preserve its color and flavor as well as prevent microbial spoilage and fight off oxygenation. Pre-dissolve in a small amount of the wine first, then add to the batch and mix thoroughly.

How to use to sanitize equipment: In stronger doses potassium metabisulfite works well to sanitize your equipment, with no negative consequences. Make a solution of 8 teaspoons dry measure of potassium metabisulfite added to 1 gallon (4 liters) of water, and then rinse your equipment in this solution for about 5 minutes to sanitize, and let drip dry.
